Well mannered - You can well abuelita is well mannered by the fact she wears a "respectable" black dress.  The fact Abuelita is well mannered is also supported by the text when the book talks about Esperanza loving Abuelita more for her capricious ways than her propriety.  The use of the word propriety implies that Abuelita is well mannered in public settings.

Unpredictable - You can tell Abuelita is unpredictable because the novel speaks of Abuelita occasionally walking through the vineyards barefoot quoting poetry to the birds and  she would also wear flowers in her hair sometimes.

Respected - Abuelita is shown respect when she walks into a room and everyone scrambles to make her comfortable.
